Being Healthy….why is it so difficult for me? Lets all help each other better ourselves! :-)

So I really want to be motivated to eat better and work out and to teach my children to be healthier!

I’m 28 and not in horrible shape.  I’d say I’m about 5’5″ and weigh around 125-130lbs.
Now I know that is not over weight for my height or anything like that….BUT I feel like I still have that baby belly bulge and my BABY will be 3 on the 31st of this month.    I want to be motivated to eat better and feed my family better and to be more active, on my own and as a family.
WHY do I find this so difficult?  I get so excited to start the process and I do good for a week or two then it seems like life gets crazy and I don’t have time to work out.  Sometimes I feel like I find it way to easy to make excuses to NOT work out or NOT eat right.  I want to have more energy and not feel so tired when I take my kids to the park.  I want to be the mom running around with her kids not the one dragging behind them.
I’m trying very hard to drink more water.  I have started adding cucumbers and lemons to add some flavor to keep myself from getting board.  I want to not only eat better myself but encourage my husband and kids to eat better.  I LOVE to cook and try new foods and I am working very hard to add extra veggies and fruits into our diets.
If you have any good recipes to help get those veggies in them with out my picky eaters noticing I’d love for you to share them! 🙂
