Breakfast Burritos – Freezer- Friendly!

wpid-C360_2014-03-14-09-37-24-842.jpgMy husband gets up around 3:30 AM to get ready for work.  He needs something for breakfast that is going to be quick and easy.  It is to expensive for him to get something fast food every day.  He usually eats bagels but I wanted to give him a little change.  We both really like the McDonald’s breakfast burritos and I have to tell you these are pretty darn close!  Now if I could figure out how to make their hash browns for my kids I’d be doing good. 😉  To make it a little more special I wrote on a few of the burrito wrappers with some little notes for my husband to tell him how much I love him.

Breakfast Burritos - Freezer- Friendly!

Ingredients
  • ¼ cup butter
  • ⅓ cup chopped onion
  • ⅓ cup chopped green pepper
  • ⅓ cup chopped red pepper
  • 18 eggs
  • ½ cup milk
  • 1 pkg Jimmy Dean crumbles Turkey sausage (or 1 cup regular cooked sausage)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 to 3 cups shredded cheddar cheese
  • 20 tortillas
Instructions
  1. Saute onions and peppers in butter. Beat the eggs and milk together and pour into the skillet with the onions and peppers.
  2. Add the sausage, salt and pepper to the skillet. Cook, stirring occasionally, until eggs are set. Mix in cheese and let it melt.
  3. Scoop ½ cup egg mixture onto tortillas. Fold ends under and roll up. Freeze (see instructions below)
  4. FREEZER Instructions:
  5. Warp burrito in a paper towel and then in a sheet of foil. Seal tightly and place in freezer bags. When bag is full remove all air and seal. Freeze
  6. To Serve: Remove foi and put paper-towel-wrapped burrito in microwave. Reheat for around one minute. Serve alone or with salsa..

  2. I often do freezer bowls for my husband too! Sausage, eggs and sometimes onions& green peppers! just can’t beat it for a hot breakfast from home that I don’t have to cook at 5;30! agree!

    • Sharon I’ll have to try freezer bowls too. I’m looking for ways to give him a little bit of a variety in the morning so he doesn’t get burnt out having the same thing each day.
