For Valentines Day I wanted to make a special little treat for the whole family. My family just loves strawberries and we all love chocolate as well so of course I first thought of chocolate covered strawberries.
BUT this year I wanted to put a little twist on it so I decided to fill them with cheesecake.
First you need to use a strawberry huller or pairing knife. With the knife you will cut around the top of the strawberry. Prep all strawberries and set aside.
Next, in a mixing bowl, beat cream cheese (8ounces), 3 to 4 teaspoons powdered sugar, and 1 teaspoon vanilla extract until creamy. Ad the cream cheese mixture to a piping bag or a ziplock bag with the corner snipped off. Fill the strawberries with the cheesecake mixture. Once the strawberries are filled dip the top in graham cracker crumbs.
Then get your chocolate melts and melt them. Dip the bottoms of the strawberries in the chocolate then place on wax paper to allow the chocolate to harden.
If not serving immediately, refrigerate until serving.
