For me this crock pot chunky beef stew is one of those feel good type of meals.
Crock Pot Chunky Beef Stew / FREEZER FRIENDLY
Ingredients
- 1lb beef stew meat
- 2 Tbs olive oil
- 4 C beef stock
- 1 C onion, chopped
- 1 C celery, chopped
- 1 C baby carrots halved
- 2 white potatoes, chopped
- 1 28 oz can diced tomatoes
- ½ tsp rosemary
- ½ tsp thyme
Instructions
- Freezing instructions:
- Place beef in a gallon size freezer bag.
- Add all the other ingredients to the freezer bag
- I mixed the rosemary and thyme with the the tomatoes before I added them to the freezer bag
- Take out of the freezer the night before and place in the fridge to thaw
- Pour a little bit of olive oil into the bottom of the crock pot
- Cook in crock pot on low for 6 hours or until meat is tender.
- Add salt and pepper to taste and serve
- To prepare right away:
- Pour a little bit of olive oil into the bottom of the crock pot.
- Add all the ingredients to the crock pot cook on low for 6 hours or until meat is tender.
- Add salt and pepper to taste and serve.
