In the small town I grew up in, in Indiana there was an awesome theme/ water park we used to go to every summer.  It was great we could ride all the rides and play in the big water park.  My parents loved that they didn’t have to spend a lot of money on food because we always brought our own packed lunch in a cooler.  For us that was a big money saver and I’m sure made it much less stressful for my parents because each of us kids could choose what we wanted to take for our lunches.
I was so excited to find out that Schlitterbahn they allow you to bring an ice chest.  My kids can tend to be very picky eaters.  Allowing them each to choose what lunch they want to take and pick their own snacks as well is going to be so helpful.  Plus saving money is always a good thing!    Another HUGE plus is there will be no standing in line for a drink or for lunch we can all sit down and enjoy our lunch and instead of waiting in lines we can spend more time playing and having fun!
The thing about Schlitterbahn is the ticket price is the end of it – no nickel and dime charges here! You can bring in an ice chest full of food and drink and parking is free.
There’s a huge variety of rides – some wild, some mild – and there’s plenty of room for you to set up your own picnic.

icechestchallengefinallogo-mom.jpg       I love a good macaroni salad that can be an entire meal all in one dish.  It is great for sticking in an ice chest for a full lunch on a day at Schlitterbahn.

Classic Macaroni Salad

What you will need:

  •  4 cups uncooked macaroni noodles
  •  1 cup mayonnaise
  •  1/4 cup distilled white vinegar
  • 2/3  cup white sugar
  • 1/2 tablespoons prepared yellow mustard
  • 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  •  large onion, chopped
  • stalks celery, chopped
  • green bell pepper, seeded and chopped
  • 2 cups precooked chicken breast, chopped into bite sized pieces

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  2. In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, cubed chicken and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.
