Potato Pancakes:
5 potatoes peeled and shredded
2 eggs, beaten
1 onion, finely chopped
3 tablespoons all- purpose flour
salt and pepper to taste
3 tablespoons vegetable oil
In a large bowl stir together potatoes, egg, onion, flour, salt and pepper.
In a large skillet, heat oil over med: high heat. Drop large spoonfuls of the potato batter into the skillet and flatten cakes slightly with a spatula. Cook for about 4 minutes on each side, until golden brown.
SERVE IMMEDIATELY!
I have made these for my family and they are always a big hit! My husband wasn’t to sure about them at first
