We had this Slow Cooker Cilantro Lime Rice for dinner last night and as you can see from the picture I just served it with rice. My husband and I both really enjoyed it. It was full of flavor!
Slow Cooker Cilantro Lime Chicken / FREEZER FRIENDLY
Ingredients
- 6 chicken breasts
- 3 Tbs Olive oil
- 2 limes, juiced
- 2 cups cilantro
- 24 oz bag of frozen corn
- 4 minced garlic cloves
- 1 finely chopped red onion
- 2 cans of black beans, drained and rinsed
- 2 tsp cumin
- 2 tsp chipotle powder
- salt and pepper to taste
- ***If freezing add ½ cup water or chicken broth
Instructions
- Freezer instructions:
- split everything evenly into two large freezer bags.
- Seal bags, shake them to mix everything well. Place in freezer until ready to prepare.
- (I'd take out both bags at the same time. For my husband and I, I took out one bag and we ate it all)
- Cook on low for 8 hours or high for 4 hours. You can serve with tortillas, tostitos or rice. You can also dress with sour cream, guacamole and rice.
