Slow Cooker Cilantro Lime Chicken / FREEZER FRIENDLY

We had this Slow Cooker Cilantro Lime Rice for dinner last night and as you can see from the picture I just served it with rice.  My husband and I both really enjoyed it.  It was full of flavor!

Slow Cooker Cilantro Lime Chicken / FREEZER FRIENDLY
 
Ingredients
  • 6 chicken breasts
  • 3 Tbs Olive oil
  • 2 limes, juiced
  • 2 cups cilantro
  • 24 oz bag of frozen corn
  • 4 minced garlic cloves
  • 1 finely chopped red onion
  • 2 cans of black beans, drained and rinsed
  • 2 tsp cumin
  • 2 tsp chipotle powder
  • salt and pepper to taste
  • ***If freezing add ½ cup water or chicken broth
Instructions
  1. Freezer instructions:
  2. split everything evenly into two large freezer bags.
  3. Seal bags, shake them to mix everything well. Place in freezer until ready to prepare.
  4. (I'd take out both bags at the same time. For my husband and I, I took out one bag and we ate it all)
  5. Cook on low for 8 hours or high for 4 hours. You can serve with tortillas, tostitos or rice. You can also dress with sour cream, guacamole and rice.
