With the cold weather here I’m on the hunt for good warm comfort foods. This one is a definite KEEPER! It is a very quick and satisfying meal for cool weather.
Ingredients:
- 2 tablespoon olive oil
- 1 large onion
- 1/2 tablespoon to a tablespoon minced garlic
- 1 tablespoon Ground cumin
- 1 teaspoon Dried Oregano
- 1/2 teaspoon crushed red pepper
- 1 lb chicken
- 3 15-oz cans Cannellini Beans
- 1 cup Chicken broth
- 1 7-oz can Diced Green Chilies
- 1/2 cup Whipping cream
- Your favorite kind of Shredded cheese
- Tortilla Chips
- Avocado slices
- sour cream
Chop onion. Cut chicken into bite sized cubes. Saute onion, garlic, oregano, cumin and crushed red pepper in olive oil for about 5 minutes. Push to the side of the skillet and add chicken. Cook chicken for another 5 minutes. Add Cannellini Beans (with liquid), chicken broth, diced green chilies, and whipping cream. Let all cook together for about 10 minutes or until the chicken is cooked though and is tender.
Top each bowl with a dab of sour cream, a few slices of avocado and the shredded cheese. My family likes to also crush up tortilla chips or dip the entire chip into the soup for a bit of added crunch and flavor.
