Slow Cooker Fiesta Chicken Soup/Freezer Friendly

While putting this Slow Cooker Fiesta Chicken Soup together I had trouble decided if I really wanted to freeze it or stick it in the crock pot right away.  Just the smell of it was amazing I can’t wait to eat it!

Slow Cooker Fiesta Chicken Soup
 
Ingredients
  • 1lb boneless skinless chicken breast
  • 2 cloves garlic, minced
  • ½ cup onion, diced
  • ½ cup carrots, diced
  • ½ cup corn
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1 10 oz can Rotel Diced Tomatoes with Green Chilies
  • 1 14.5 oz can chicken broth
  • 1 lime, juiced
  • 1 cup Salsa Verde
Instructions
  1. For freezing:
  2. Place Chicken and veggies in a gallon freezer bag.
  3. In a mixing bowl, mix spices, with the Rotel, chicken broth, lime juice and Salsa Verde.
  4. Pour mixture in freezer bag over chicken and veggies.
  5. Place in freeze
  6. When ready to cook take out the night before and allow to thaw in the fridge.
  7. Spray crock pot with non-stick spray.
  8. Pour bag into slow cooker and cook 6 hours on low.
  9. Hour prior to finished cooking time, take out chicken breast and shred.
  10. Return Chicken to soup and finish cooking time.
  11. Garnish with sour cream and or tortilla strips. (Or however you'd like)
  12. If your wanting to fix it in the crock pot right away follow these directions:
  13. Spray slow cooker with non-stick cooking spray
  14. Add all ingredients into slow cooker and cook 6 hours on low.
  15. Hour prior to finished cooking time, take out chicken breast and shred.
  16. Return Chicken to soup and finish cooking time.
  17. Garnish with sour cream and or tortilla strips. (Or however you'd like)
