  • 2 lbs boneless, skinless chicken breasts (about 8 small pieces)
  • 1 cup whole wheat Italian-style breadcrumbs

How to Make Spinach & Ricotta Stuffed Chicken Rolls

Step 1: Prepare the Chicken

Cut the chicken breasts into 8 smaller pieces. Using a meat tenderizer mallet, pound the chicken until thin. This helps the chicken cook evenly and makes rolling easier.

In a shallow bowl, combine the breadcrumbs with 2 tablespoons of Parmesan cheese.
